The first thing to clarify is that Hangouts doesn't actually have a function to delete a message. What it allows us to do in case you don't want messages to be saved is turn off history in so that absolutely nothing is saved this way.
When we turn off message history, they will be available for a short period of time. They are then permanently deleted and can no longer be viewed on any device.
It's a shame that Hangouts doesn't have as simple an option as delete messages. However, at least we have the alternative which, while not perfect, allows us to have some privacy by automatically deleting all messages after X amount of time.
We will see some fairly simple tutorials related to the messages of Hangouts which will surely be very useful. We may not be able to delete or delete a Hangouts message, but we can work with the options that Google gives us.
How to delete message history in Hangouts

There is no option to delete a group's message history. The only thing you can do is simply drop the conversation. In case someone adds you to the group again, you will be able to view all history again.
How to hide a conversation in Hangouts
- Hiding a conversation is easy enough. From your computer, open a chat.

- This way you can hide said conversation. However, if you receive a new message from that contact, the chat will appear in the conversation list again.
How to turn off or turn on Hangouts Message History

If it is checked, it means that history is enabled. You will see all Hangouts messages on all your devices. If it is unchecked, the messages could be seen for a limited time on the devices and then disappear without being saved anywhere.
As you can see, it has a large number of options in terms of message history. Perhaps compared to other applications it is somewhat limited and hence its low popularity in terms of instant messaging applications despite coming from Google.
However, the only option we have so that messages are not saved is the one we discussed above. At the moment, we cannot delete a single message in any conversation.
